Ingredients -
- Baingan (if big one, weighing about 300/350 grams, if small ones all together weighing approx 300/350 grams, chopped)
- Potato (2 medium sized, peeled & chopped)
- Tomato (1 medium sized, chopped)
- Curry leaves (8 to 10)
- Mustard seeds (1 teaspoon)
- Ginger & green chilly paste (1 table spoon)
- Chilli powder, turmeric powder (as per taste)
- Oil (1 tablespoon)
- Salt (as per taste)
- Heat the oil in a pressure cooker.
- Add the curry leaves & mustard seeds, let them crackle.
- Add the tomatoes.
- Add the ginger & green chilly paste, chilli powder, turmeric powder & salt.
- Fry the masala for a few minutes, taking care not to get it burnt.
- Add the potatoes & chopped baingan.
- Mix all to ensure an even coating of the masala.
- Add just about 2 table spoons of water.
- Pressure cook for 3-4 whistles and low flame for 5-8 minutes.
- Garnish with coriander & serve hot.
