simply urs - jeera rice

Item - Jeera Rice

Serves - 3 to 4
Ingredients -
  • 2 to 3 cups cooked rice - plain or basmati
  • 1/2 cup coriander, freshly chopped
  • jeera, 2 to 3 tsp
  • ghee, 1 tbsp
Method -
  • In a broad & shallow vessel, add the ghee, if you want you can mix some ghee and some oil.
  • Once hot, add in the jeera and allow it to brown / crackle.
  • Add in the coriander & the rice, mix well and allow it to be on slow flame for a few minutes.
Can add in some garlic pods or a stick of cinnamon with the jeera to give a zing...

garibo ka nawazi khana - aloo pyaaz

Item - Aloo Pyaaz

Serves - 3 to 4

Ingredients -
  • 3 medium sized onions, finely chopped
  • 3 medium sized potatoes, peeled & cubed
  • curry leaves, 8 to 10
  • salt to taste
  • dhaniya zeera powder, 1 tsp
  • chilli powder, 1 - 2 tsp
  • turmeric powder, 1 tsp
  • green chillies, big cut, 2 to 3
  • oil, 2 tbsp
  • mustard seeds, 1 tsp
  • garlic, 2 to 3 pods crushed

Method -
  • Pour the oil in the pressure cooker.
  • Once it heats up, add the mustard seeds, allow it to crackle
  • Add in the curry leaves, green chillies & garlic
  • Stir fry for 2 minutes taking care not to burn the garlic.
  • Add in the onions.
  • Cook for 5 to 10 minutes till light pink.
  • Add in the masala - salt, chilli powder, turmeric powder & dhania zeera powder.
  • Stir for a few minutes, mix in the potatoes and toss well till well covered.
  • Pour in about 11/2 to 2 cups of water (depending on your choice of gravy thickness).
  • Pressure cook for 3 whistles, slow flame for 5 minutes.
  • Serve hot with khichdi or plain rice or with phulkas or jowar rotis.
